Is boiled pork knuckles with mashed carrot and swede.

It is a traditional Swedish dish and it is Very yummie!

You simmer the pork knuckle with some white whole pepparcorn and some bayleaf and salt.
for about 1 - 2 hours. Until the meat falls of the bones.

Then you take some of the broth and boil carrots and swede until tender enough to mash with generaus amonts of butter.

Take out the meat and take away any bone and cartiledge so you are left with the meat.

Take a big portion and sit down and enjoy!

That looks yummy, Annika. I do the same thing with beef short ribs and the meat is so tender. I also cook rutabagas, or Swede as you call it and just love them.
