View Full Version : Apricot, Cranberry and Walnut Loaf.

Here is one of my favourite recipes:-

125g Dried no soak apricots (chopped up)
100g Dried cranberries
1 Teabag(regular black tea works best here but you could try Earl Grey or some such type)
450mls Water

75g Porridge oats
2 Eggs
150g Sugar(regular white sugar)
500g Self raising flour
1 tsp salt
1 tsp baking powder
100mls milk
100g walnuts

In a pan you put the apricots cranberries, teabag and the water.
Bring this to a boil, turn off heat, stir in the oats. Put the lid on and set aside to cool.

Beat eggs and sugar, then sieve into the wet mix the flour, baking powder and salt.
Stir in the fruit and tea mix little by little, then the milk.
Lastly stir in the walnuts.
Pour into paper lined loaf tin.
Sprinkle over the remaining oats mixed with a 1 heaped tablespoon demerara sugar. *This gives a yummy crunchy top to the loaf!

Bake for 1- 1 1/4 hours at 180c/350f/gas4.
Turn out onto rack to cool.

This fruit loaf is really great toasted and spread with butter. Fabulous for breakfast!

Oh, and just now I find this - after I've fixed breakfast. May have to hold onto this one for tomorrow.

Sandy, it's really good at breakfast as it's filling and wholesome too! Not too sweet and not too bad for(except for the butter!).

bakermom, It keeps very well 4-5 days, maybe even a week if my household would allow it! and it freezes too.
