Ingredients

6 cups cooked short grain rice (cooled)
1 can Spam - this is the ONLY way I'll eat Spam, but you can substitute any meat ... see below
2/3 cup chopped onion
1 clove minced garlic
4 eggs
1/3 cup Kikkoman low sodium soy sauce (add to your own taste)
2 tablespoons olive oil
Directions

cut Spam into 1/2 inch cubes and brown in large dry skillet
add olive oil, onion and garlic
reduce heat to medium and cook until onion is done
crack eggs into a bowl and beat with fork
raise heat slightly and scramble eggs into the meat, onion mixture
turn heat to low
add rice
sprinkle soy sauce over rice mixture and stir until heated through

All measurements are approximate....
There are many substitutions that can be made to this dish. instead of the Spam: 6 slices of bacon cut into 1 inch pieces and fried until crisp 10 or 12 shrimp cut into pieces ... 1 cup of cooked chicken or pork work well also. I have also added frozen peas and sliced water chestnuts
