This is Mom's recipe and I think it came from her mom.
It is considered a "Quick Bread" type of recipe and makes a nice moist loaves. I spray the inside of the pans with the cooking spray with flour mixed in.
I don't have a small can for the actual volume. (We never make that small of a batch!) You must use the 100% Pumpkin NOT the pie filling!
Small Can(16 oz?) - Canned Pumpkin - Lg Can (29oz/822g)
2 cups - Granulated Sugar - 3 cups
1 cup - Vegetable Oil - 1 1/2 cups
3 - Eggs - 5
3 cups - Sifted Flour - 4 1/2 cups
1/2 tsp - Salt - 3/4 tsp
1/2 tsp - Baking Powder - 3/4 tsp
1 tsp - Baking Soda - 1 1/2 tsp
1 tsp - Ground Cloves- 1 1/2 tsp
1 tsp - Cinnamon - 1 1/2 tsp
1 tsp - Nutmeg - 1 1/2 tsp
Pre-heat oven to 325 degrees F.
In a medium bowl sift/whisk together flour, salt, baking powder, baking soda, and spices. Set aside.
In a separate large bowl at medium speed beat sugar and oil until well blended.
Add eggs one at a time, beating well after each egg is added. Continue beating until the mixture is light and fluffy. (The color will lighten several shades.)
Blend in the pumpkin and beat until completely mixed.
With mixer on low, add flour mixture to pumpkin mix.
Divide batter among pans. Fill no more than half full.
Bake for 60 minutes or until toothpick inserted in the center comes out clean.
Cool in pans for about 10 minutes and remove from pans to cool on racks.
* Note* I have left the amount of spices at the smaller loaf amount when making the larger batch with fine results.

My sister has this recipe for her bread machine. It's close, but not quite the same as Mom's.

1 cup Pumpkin
1 cup Granulated Sugar
1/3 cup Vegetable Oil
1 tsp Vanilla
2 Eggs
1 1/2 cup Flour
2 tsp Baking Powder
1 tsp Cinnamon
1/4 tsp Nutmeg
1/8 tsp Ground Cloves

Grease bread machine pan & blade with shortening.
Place ingredients in the pan in order recommended by the machine manufacturer. (I did whisk the dry ingredients together before adding them to the machine. I also whisk up the eggs before I put them in the pan too.)
Select "Quick Bread" program. After 4 minutes open lid & scrape down sides helping to incorporate flour.
Cool bread in pans 10 minutes. Remove from pan and let set up & cool at least 1 hour before slicing.

I've had this one, and it's pretty good. Again, not Mom's but it will do when you need to multi-task!

Sounds Yummy, If I'm baking will definitely make the larger batch. I do that with Banana Bread then freeze, if I don't give them away.
I love quick breads. Thanks for sharing.:icon_wave:
