We do the taco thing sometimes by instead having nachos with cheese and refried beans and meat of course and a few jalepenos. A nice healthy heaping of cholesterol, but it changes it up a bit. Sometimes I just fix the meat, beans, gaucamole and sour cream, and scoop that into a bowl and then serve with chips for dipping. Lately I have been fixing burritos instead too. Meat mixture, refried beans and spanish rice in a large burrito flour tortilla.
My husband is Hispanic and will make tacos out of anything! Last month, tacos de lengua; a couple of months ago carnitas (cooked outside in a HUGE pot). I'm less adventurous and prefer refried beans (without lard--I don't eat pork) as a base--though I won't say no to lamb or goat!
Several years back I went to a carry-in dinner that had a taco salad and it was awesome so I got the recipe from my friend. Basically, you fry the meat like normal and add the powder mix just like normal but reduce the water a little so it's not as thin....then, add one jar of chili sauce. I usually add a little water to the chili sauce jar and shake it around and pour it in there as well which is why I reduce the other water by a little. Also, when I do this I usually reduce the powder mix as well, for example if I make 3 lbs of meat then I only put 2 packets of powder. We have 3 grown boys so I usually make 3-5 lbs at once so we have leftovers for a couple days. The chili sauce adds a different flavor and my boys won't eat it any other way now.
