When you buy tacos at a good mexican restaurant, they never use ground beef
Yeah, I think that was a home cook thing. My mom made them like that too. I became a vegatarian early on and used beans, avos ect. I added fish back in.

We do the taco thing sometimes by instead having nachos with cheese and refried beans and meat of course and a few jalepenos. A nice healthy heaping of cholesterol, but it changes it up a bit. Sometimes I just fix the meat, beans, gaucamole and sour cream, and scoop that into a bowl and then serve with chips for dipping. Lately I have been fixing burritos instead too. Meat mixture, refried beans and spanish rice in a large burrito flour tortilla.

My husband is Hispanic and will make tacos out of anything! Last month, tacos de lengua; a couple of months ago carnitas (cooked outside in a HUGE pot). I'm less adventurous and prefer refried beans (without lard--I don't eat pork) as a base--though I won't say no to lamb or goat!
