Egg-Free Chocolate Cake Recipe
Posting in honor of my Mom's 87th birthday tomorrow. The city Mom grew up in during the Great Depression was still somewhat rural and her family kept chickens to get by. She developed an aversion to eggs -- not an allergy -- and won't eat a homemade cake if it has eggs in it. This was her go-to cake recipe for years. I added sour cream to the recipe because I thought the cake was a little dry without it. Enjoy!
1/2 cup shortening
1 1/2 cups sugar
1/2 cup coffee, boiling
1/4 teaspoon salt
1/2 cup cocoa
1 teaspoon vanilla
2 teaspoons baking soda
2 1/2 cups all purpose white flour
1 cup sour milk (1 tablespoon vinegar or lemon juice plus enough milk to equal 1 cup)
1/2 cup sour cream
Mix the shortening, sugar and cocoa. Add the remaining ingredients and beat well. Pour into a greased and floured 9x13 pan and bake in a preheated 350 degree oven for 30 - 40 minutes.
I have made this in two 8" round pans and it makes a great cake for layering. You will need to reduce the bake time to 25 - 30 minutes.
