I used 100% cotton thread when I did hand quilting. There is a product called Thread Heaven that is a thread conditioner. You run your thread across it and it coats your thread and prevents fraying. I comes in a tiny square blue case and costs about $3...worth it's weight in gold! You should have no trouble finding it at the fabric store or quilt shop.
