I completed two rows of my braid quilt and realize after all this work I don't have enough jelly rolls to make more.
Does anyone have any suggestions for this quilt? I could put each braid on the sides and do something else in the middle

You can sash around each row of braids which will give you a bit more width. How about a nice bit of pinwheels in the "centre panel" that would give it a nice bit of contrast but still tie in using the same colors??? Or smaller individual "panes" with quarter dresden plates (believe they are called granny fans)??

This is a friendship braid, not a french braid but the principle is the same. You want your square the same length as your strip. You can get up to a King size quilt with one jellyroll from this pattern. Hope it helps.

Uhm...how about buying a second jelly roll? You'll need more fabric anyway, so it might be worth it.
