I want to make a quilt either all black and white or an all red and white. Any thoughts on pros and cons for either way? I know it's hard working on black fabric and I'm also concerned about fading. What are your thoughts?

It is not hard working on black fabric!
Either one makes a stunning combination, I would go with whichever one you like best.

There are Color Catcher sheets available in the laundry department of most stores that will catch any dye than migrates during washing. I love two color quilts. Either combination would be great. I also love black/white with a touch of red for an accent.
In our home a red/white quilt would be more versatile because it could be used for Christmas and Valentine's Day décor. It's just personal preference and what you like better.
I have made several quilts with black without any problems. Both of those color combinations are striking! If you prewash the fabric there should be no bleeding.
Pick what you like best.....or make both!

First, I would like to say that 2 color quilts set my heart a flutter !! A red & white quilt just makes me tingle all over! I made a black & white baby quilt for a girl that I used to work with. She requested the colors. I did an "almost" Yellow Brick Road pattern. I say almost because I cut some of the pieces wrong so I had to improvise. I couldn't bind it in white and a black binding just seamed too much and I just thought it needed a pop of color so I bound it with red. I pieced it with white thread because I could not see to unsew black thread on the black fabric.

I'm working on another black and white with a punch of yellow gold. I'd post a pic if I could.
I just finished this red/white quilt yesterday
If you are concerned with running...I wash my quilts with Dawn dishwashing liquid and do not have that problem. A black and white quilt with red applique is on my to-do list for this year. My DD goes to a college where those are their colors. I will be tackling that shortly. I just love my red and white quilt....that is my vote!
