I like Eleanor's video on binding and I have learned to keep the volume as low as possible and still hear what she says. She has a wealth of information and good tips to share.
I was liking this one but noticed in yours how the angle went down and not up. No wonder it was folding weird. That little angle didn't even need to be there. lol I'm going to try yours tomorrow :)

I agree with clipping off a bit to lessen the bulk. I also try to fold it first one way and then the other. It seems there is always a preferred way that the binding wants to go!
I use the double-mitered binding method instead of the continuous binding. The corners come out so much better for me.
Aww, do I HAVE to? lol I actually watched it, and it's not TOO bad, but she just talks to us like we're toddlers. I talk to my 3 yo nephew with a more adult voice than that lol Drives me loopy! Thankfully I found out I was doing it right anyway, so I NEVER have to watch it again! :icon_giggle:
She really doesn''t bother me either. I look at her as kind and really friendly.
I agree with Marilyn. To help me when I first started, I marked a dot with ball point ink 1/4" inch away from the seam allowance at the corner and made sure that my needle stopped exactly at the 1/4 inch mark. Then I raised the presser foot and flipped and folded the binding into 45* angle and continued. This worked miracles for me and I've never had troubles since. Always nice miters.
