Another way to arrange them is to take colour out of the equation and sort by "value". Turn your picture black and white and sort that wayLike so:
Now sort from lightest to darkestThat's what the "Ruby Beholder" does (there's another tool that I don't remember) and some people swear by that for picking fabric colours. I always just take a black and white picture with my phone and judge that way, no extra tools or gadgets required!

Here's another way to get a rainbow with out to much effort. You will have to get more fabric or use your stash for it. I saved this one because it was bright and cheerful and wanted to remember it. I wouldn't use fruit though, lol

Here is how I would line them up. Starting with the light pink as #1:
1, 2, 12, 5, 4, 7, 6, 8, 9, 3, 10, and 11.
It is not as much of a rainbow, but to me the colors would flow better.
After much thought to post his, but I'm not getting rainbow from your fabrics. It's just not clicking rainbow to me.
