Another way to arrange them is to take colour out of the equation and sort by "value". Turn your picture black and white and sort that way :) Like so:

Now sort from lightest to darkest :D That's what the "Ruby Beholder" does (there's another tool that I don't remember) and some people swear by that for picking fabric colours. I always just take a black and white picture with my phone and judge that way, no extra tools or gadgets required!
That really does work!!! Now to figure out how to turn the camera from color to black and white.
Here's another way to get a rainbow with out to much effort. You will have to get more fabric or use your stash for it. I saved this one because it was bright and cheerful and wanted to remember it. I wouldn't use fruit though, lol

Here is how I would line them up. Starting with the light pink as #1:
1, 2, 12, 5, 4, 7, 6, 8, 9, 3, 10, and 11.
It is not as much of a rainbow, but to me the colors would flow better.
After much thought to post his, but I'm not getting rainbow from your fabrics. It's just not clicking rainbow to me.
