I will be quilting a baby quilt this weekend and I am using minky as the backing. Do I use batting as well? If you tell me it is personal choice can you tell me the difference in using it verse not using it?

I don't think I would. It's such a heavy fabric. I would treat it like when you use flannel on a quilt top that doesn't have batting. My mother in law used to make them all the time. The quilt I'm working on right now I'm just going to use flannel. That probabaly didn't help much. lol

Ive made a few baby quilts with minkee backing and no batting. It is warm enough with it just like that. One of the mom's Ive given one to said she likes the minkee on the back, she puts it on her DD minkee side down to be warmer, or the cotton side down to feel a little cooler. Though I dont see why you couldnt use batting with it to be honest if you want it to be extra warm.
Finished is way better than perfect!
I wouldn't use batting with minky because minky is pretty heavy, and batting would make the quilt rather heavy for a baby quilt in my opinion.
I will go with no batting.
