I like all the "older" patterns in two colors, like bears paw. but I think I would show her some pictures and talk her into making the burgundy a lighter shade or talk her into adding a cream to it.

Thanks for the ideas, I will definitely be checking out those sites. It was a no go on getting any creams or lights in the mix. I think I might do some things with hst. I have a little while to plan as I finish another quilt...so maybe I can do some more talking.
I once did a Patience Corner quilt. The fabrics didn't have a lot of contrast, but the quilt is quite pleasant.

I really think Sewbee has the right idea - there are so many tone on tones out there - and I truly believe with something like a batik with subtle pattern and a tone on tone would work well.
I'm laughing because that would nave never done for my Mother. She always insisted if the bed didn't have WHITE sheets on it she couldn't sleep - nothing with the least bit of pattern would do either. Never did understand that - if she slept with her eyes closed.
You may just want to pick up a couple fabrics and make a sample swatch/patch/block and see if that's what she really wants. Don't forget there was a thread here this week because someone picked the pattern and fabrics yet hated the quilt once it was done. Don't put yourself in that position if you can help it.
Be warned. I am BORED.
This could be dangerous.
When you get cold just go stand in the corner.
They are usually 90 degrees.
A giraffe's coffee would be cold by the time it reached the bottom of his throat.
Ever think about that? No? You only think about yourself??
What if you do the Irish chain? That would be really easy with two colors.

I don't know if you found a pattern yet but Fons &Porter has some free patterns for two colors. Google two color quilt patterns.

The hunter's star is a nice pattern, and works better with the ruler. I've seen it done in red and white, and black and white. very nice!
When I was little my mom had a quilt that was the apple core pattern and it only had two colors. I always liked it.

Jacobs ladder was my first thought when I read the title. I think I would see if she would mind you adding a little off white or something with it.
