I love it! I want to make one with denim to throw in the car for the beach. I was going to donate the fabric but this will be perfect for it.

I love your big but. Well, you know what I mean. I always felt the same way about this quilt. I even stored fabric for one for ever and then used it for something else because I just couldn't stand the thought of having to make one of them. This one has me wanting to go and buy fabric for it right now. I will finish one now. I will I will!

I'm not 100% sure I understand your question.
A true Cathedral Window quilt has no templates. It's all done by folding fabrics (several times) into square units, stitching together and then flipping back edges and stitching down over a contrasting fabric.

This is a close-up of a partial traditional cathedral window.
The one up above can be made using any circle template, like the Circle Magic template that M* sells or just and circle template or something round you can trace or cut around.

So, how does one make the "mock" version of cathedral windows?
I saw the Moda tutorial. I am assuming (correct me if I am wrong) that shows the true cathedral windows.

This is the only one I know... I state fully that I know nothing about mock, or non-mock- Cathedral window quilts.

Nope, the Moda one is a mock cathedral window as well.
The traditional cathedral window is all done with folded fabric squares and hand sewn, not with circles.

Years ago the true cathedral window quilt was notorious among my quilting friends for being the project we all fell in love with, many of us started, and virtually no one finished. So beautiful, and so. much. work. Oh my. Right about now the mock cathedral wind quilt is looking pretty good to me.

I made this pattern from a variety of fabrics along with my Grandmother's linen (she died in 1960). I call this the 3-generation quilt because it now belongs to my mom. However, I never thought of it as a Mock Cathedral Window. I think of the 10-minute block as a mock cathedral and there is a great tutorial on the Faux Cathedral on Youtube.
