Knits
This is about sewing in general. I tried my first hand sewing a blanket with knit fabric. It looks terrible. I'm embarrassed it was for a gift ... I still gave it to my friend.
I did one piece of knit cotton and a rib knit fabric for the binding. It was so wavy.

I want to just say I will never again work with knit fabric. I am a stubborn girl and determined to try another project. Do you have a favorite website where I can learn more about working with knit? Or maybe some tips?

I've never heard of quilting or making blankets with knit. I only know of using knit with clothing patterns. My understanding of knit is that it's very stretchy and that's why it's used for clothing. Maybe that is why it came out so wavy?
For a blanket or quilt I'd only use a 100% cotton quilting fabric or I have also tried men's dress shirts, or flannel. I have heard of some people sewing with jeans. Or minkee. But I don't recall seeing anyone trying to make a blanket or quilt with a knit fabric. 
Sorry I can't offer more help other than to try a different fabric. Maybe someone with more general sewing experience will chime in!!

So are you saying you just used the knit fabric for the binding, or was it part of the backing or front? Honestly, I like the wavy part of the binding that it created. Gives the blanket character I think. I think it looks good for a baby blanket, and remember when any gift is hand made, it's always the thought that counts behind it all!!

If was one layer you have to put stay tape around the sides to keep from stretching

I would never hand sew a knit fabric. I use a ball point needle in the sewing machine. The only knit fabric I have ever used as a blanket is fleece and that is different than a regular knit.
I forgot to say that I really do think your gift is really cute and will be very comfy!

Knits ugh! Great for making clothing as they have a generous stretch to them - Here is a link to a Knit sew-a-long to learn how to sew with them. Mostly for clothing. You need ball point pins (to not break the knit thread in the fabric) and yes, like Lisa said a ball point sewing machine needle.
Much easier to make quilts from cottons or a poly/cotton - Good luck! I bet they were Still thrilled to receive a hand-made gift from you!!!

That would be why they use iron stabilizer when making t-shirt quilts. That stuff stretches too much otherwise.

hahaha - I gave it at the baby shower and everyone thought it was PacMan. I hadn't even connected that when I bought the fabric. It's just called Ooga-Booga aliens. Here's a closer look at it:

I used a cotton interlock knit ... just one layer and then a rib knit for the binding. It is super soft fabric!
I did this all on my regular sewing machine. I think I used my walking foot if I remember.
I couldn't put a stabilizer on it since it was just the one piece of fabric. I didn't think about putting anything around the edges! And I didn't think about using a ballpoint needle. I'll have to invest in one. I still have a bit of this fabric left so I think I'll try something simple, maybe pajama pants for my little girl.

I have the same fabric in the green line. It's so cute!
Longstocking I think it's cute! Some people try to get that look on purpose! So don't be to hard on yourself. I use a serger for knits but there is a setting to do just what you came up with!
